Neapolitan pizza requires extreme temperatures for fast cooking—450°C+ (845°F) for just 45-60 seconds. The Neapolitan Arch narrows the oven's opening, trapping more heat and boosting air temperature to achieve the perfect rise and charred crust on high-hydration dough.
The arch features a ceramic-bonded design with a central recess, allowing chefs to ‘dome’ pizzas by lifting them into the flames for even heat distribution. Additionally, the Dome's Flue Extension directs smoke and soot away, enhancing airflow and performance.
Specifically designed for use with gas, the Neapolitan Arch is not intended for wood-fired cooking.
